Separate the egg white from the yolk, beat it with foam, then add the sugar in the rain and mix until it becomes a dense and sticky foam, then put the yolk, the butter that I took out in time, to be at room temperature, not melted (ie to be oily), vanilla essence and finally flour, which we mix with a wooden spoon with movements from bottom to top until the composition is well homogenized.

How to prepare pandispan with cherries and raspberries

We turn off the mixer and add the flour in the rain, mixing with a spatula from top to bottom, so as not to leave the pandispan, until the flour is incorporated.
We dessert everything in the prepared form and we put over the pandispan the fruits cleaned of seeds and & # 8222frunzulite & # 8221 (with raspberries). Put everything in the preheated oven at 200 degrees Celsius for the first 20 minutes, then reduce the heat to 180 degrees C. Do not open the oven for the first 20 minutes. When the & # 8222 toothpick test has passed & # 8221, in the sense that we insert the toothpick in the pandispan and there is nothing left on it, we take it out of the oven.
After leaving it to cool a bit, take the cake out of the mold, dust it with sugar and put some fruit on top or just garnish it with fruit, depending on how sweet you prefer it. You can serve it with a teaspoon of vanilla ice cream or a cup of coffee.
